BANANA CHOCOLATE MUFFINS



This is a terrific recipe for begginers: tasty, easy and pretty quick to make. And it doesn't matter if you don't have baking pans: just use two paper cups for muffins instead of one and the muffins will hold their shape.




This was the first recipe I made with my mother when I was 7. The name of this recipe is Bizcocho de yogur and it is one of the most popular baking recipes in Spain.

Ingredients for 19 muffins


1 large or medium ripe banana. 
3 large eggs
1 plain or flavored (banana, lemon, any flavor you like) yogurt (150g-5.3oz), preferably with some fat content. Our measuring tool will be the yogurt cup.
1 cup vegetable shortening (I always use EVOO)
1 cup chocolate chips
1 cup + 2 tablespoons sugar
3 cups flour (all purpose or pastry)
1 tablespoon baking powder
pinch of salt



1   Heat the oven to 375º F (190ºC). Prepare all you need for this recipe: a silicon spatula, a whisk, a big bowl, a medium bowl, a sifter (is ok if you don't have one) and obviously, the ingredients.




2   Place the yogurt in a small bowl or a mug so we can use the empty cup to measure the rest of the ingredients. 
In this step you have to answer a question:  Do you want your muffins super fluffy?

Of course!

  • Separate the eggs and place the egg yolks in the bigger bowl. Place the whites in another bowl and beat until foamy. Add the salt in the middle of the process and keep beating until firm. I timed myself beating the egg whites by hand: 2 minutes and 30 seconds (not so bad!). Keep the whipped whites in the fridge. Add the sugar to the yolks and mix with the spatula until combined.

  • Beat the eggs with the sugar until combined.


3   If you divided the eggs, mix the yolks and sugar with the yogurt and shortening. Do the same in case you added the whole eggs and beat for 1 minute. 


4   Cut the banana in small pieces and incorporate with the chocolate chips to the eggs, yogurt and shortening mixture.



5  In a separate bowl, mix the flour, baking powder and the pinch of salt. Sift on the batter and, this is important, mix everything fast until you have just little lumps. Don't overwork the batter. If you have the egg whites separated, fold them gently into batter before adding the flour. 


6   Divide the batter into prepared muffin cups and sprinkle every muffin with some sugar. Low the oven temperature to 350ºF (180ºC) and bake for 15 to 20 minutes (it'll depend on the size of the baking cups). Test with a toothpick if they are done and let them cool in a rack.




Note: you can change the proportion and amount of chocolate and banana if you want more or less fruit/chocolate.

1 yogur* (puede ser de sabores o natural con o sin azúcar), preferiblemente con sabor a plátano o natural.
3 huevos grandes
1 vaso de yogur lleno de aceite vegetal (yo uso de oliva)
1 vaso de yogur lleno de azúcar. Si te gustan los bizcochos muy dulces, añade un par de cucharadas más de azúcar
1 vaso de yogur lleno de pepitas de chocolate o de chocolate troceado
3 vasos de yogur llenos de harina sin prensar
1 cucharada de levadura de repostería (polvos de hornear o baking powder) o 1 sobre de levadura royal
sal

  1. Mi traductor google me dice que está genial la traducción....pero no me traduce la palabra "wisker" y me he quedado con la duda de qué significa.

    1. Ok, estaba convencida de que se escribia "Wisker" en vez de "Whisk", es la palabra para varillas de cocina
